Over two years ago I was offered a business membership to Costco. I actually had to think long and hard about accepting the offer. So even though I am a strong advocate for shopping local and independent, I decided it really didn’t matter where I bought my toilet paper or basic sandwich bread. I was buying those at a supermarket anyway. I had my membership for a year before I really used and appreciated all that Costco had to offer. My first purchase was the big jar of artichoke hearts, followed by a jar of pickled beets (for Glory Bowl – see entry below). And then I discovered the massive bottle of Costco brand (Kirkland) Extra-Virgin Olive Oil.
With one vegetarian in the house and a kiddo that doesn’t like red meat , (Mom I only like ham. And pepperoni. And sometimes turkey.) we spend lots of money on veggie bbqables. Soyburgers are often sold in packages of 4 or 8 and can be quite pricey. On our last trip to Costco during a particular sunny warm day, we picked up the Costco brand (Kirkland) vegetable garden burgers. The ingredient list looked promising: brown rice, soy, spinach, carrot, mushroom… and the price $13.99 (for a box of 15) was a big selling feature.
I have had my share of garden burgers in the past. These are, by far, the best I have ever had. And topped my favorite way with baby spinach, cheese, and avocado on a flat bun (also from Costco), I fell in love. In fact, for two nights in a row this weekend past, we ate Costco garden burgers. YUM!
I still have trouble buying books or clothing or produce there, but I am now a believer than there are some good Costco gems to be had.
